“Li Frit Chi Li Patane” (Potato Fritters)

A Traditional Christmas Treat

 Prendete 6 patate bianche abbastanza grandi, togliere prima la buccia e squagliarle molto bene.  Mescolare insieme con le patate 3 tazze di farina bianca, un cucchiaio da minestra di sale e un arancio grattugiato fino.  

Rullarle a forma di taralli, piu’ o meno la doppiezza del dito anulare.  Poi versare olio di seme in una padella, farlo bollire abbastanza forte e fate friggere i frit fin che diventano colore oro.  Friggere sei o sette alla volta, dipende della grandezza della padella.  Quanto avete finito di cuocere farli raffreddare.  

E poi mangiate e bevete un bel bicchiere di vino.

Fate un brindisi di Buon Natale a tutti gli Abruzzesi nel mondo, sopratutti i Torricellani!

 Mix the following ingredients together:  6 fairly large potatoes (but first boil them and carefully remove the skin before mashing them well),

3 cups of white flour,

a tablespoon of salt,

 a finely grated orange peel.  

Roll them into round strips so that they are the size of your ring finger. Then close them into circles, similar in shape to pretzels or Southern Italian “tarralli”.  Then, boil vegetable oil in a pan, and fry the “Frit” till they become golden in color.  Fry about six or seven at a time, depending on the size of the pan.  Let them cool.  Then have them with a nice glass of wine, and toast a Merry Christmas to all the Abruzzese in the world, especially the Torricellani!


Pizz’ e Foje (Pizza and Vegetables)

“Pizz’e foje” è senz’altro la pietanza più cucinata dai torricellani di tanti anni fa , in special modo da coloro che coltivavano la terra ed avevano l’orto. Mia nonna la faceva spesso ed a me piaceva molto in particolare i pezzi di pizza assaporati con le verdure. La pizza è una specie di pane rustico fatto con farina di mais, che in dialetto torricellano è chiamata “farina di grandinie” , le “foje” sono un misto di verdure cotte.Ingredienti per quattro persone

– 1 kg di verdure miste già pulite– 4 patate

– 300 gr di farina di grandinie– 2 spicchi d’aglio

Preparazione

Pizza

Impastare la “farina di grandinie” con acqua tiepida per formare un impasto come la densità dell’impasto del pane;Ungere la teglia e spianare l’impasto per un’altezza di 2 cm;

Infornare a 200° per un tempo sufficiente ad ottenere una pizza croccante in superficie e tenera all’interno.Verdure

Cuocere le verdure in un tegame con poca acqua ;Lessare le patate, sbucciarle, tagliarle a pezzetti e mescolarli con la verdura;

Fare in modo che le verdure non hanno acqua;Pizz’e foje

In un padellino far soffrigere 2 spicchi d’aglio con l’olio d’oliva;Rompere o tagliare la pizza a tocchetti;

Aggiungere il tutto alla pentola con le verdure;Girare per circa un minuto

Servire la pietanza calda

“Pizz’e foje” is undoubtedly the dish most cooked by the Torricellani of many years ago, especially those who cultivated land and had a garden. My grandmother made it quite often and I like it very much especially the pizza pieces savored with the vegetables. The pizza itself is like rustic bread made with corn flour, which in dialect is referred to as “farina di grandinie”, while “foje” literally translates as “leaves” and consists of a mixture of cooked vegetables.Ingredients for four people

– 2.2 lb (1 kg) of mixed cleaned vegetables (spinach etc …)– 4 potatoes

– 10.5 oz (300 gr) of “farina di grandinie” (corn flour)– 2 garlic cloves

Preparation

Pizza

Mix the “farina di grandinie” with tepid water in order to create a dough that is between soft and dense like a dough of bread;Oil the pan and flatten the dough on it so that the dough reaches a height of approx. 0.7 in (2 cm);

Bake at 392° F (200° C) for enough time to obtain a crunchy pizza surface on the outside while soft on the inside.Vegetables

Cook the vegetables in a pot with little water;Hard boil the potatoes, peel them and cut in pieces and mix with the vegetables;

Make sure that the vegetables do not have water in them.Pizz’e foje

In a little pan fry the 2 cloves of garlic with some olive oil;Break or cut the pizza in little pieces;

Add everything to the pan with the vegetables;Stir for approximately one minute;

Serve the meal warm

– A Traditional Easter Treat –

Pasta

6 cucchiai burro morbido
1 etto zucchero
8 etti farina bianca
un po di sale
2 rossi d’uova grande
8 cucchiai d’acqua (piu o meno)

Ripieno

1 etto burro morbid
6 cucchiai zucchero
6 uova
1 cucchiaio vaniglia
900g ricotta
scorza d’un arrancio grattugiato

Pasta

Mischiare burro and zucchero. Aggiungere farina e sale e mischiare bene. Aggiungere i rossi. Aggiungere abbastanza acqua per un impasto maneggevole. Impastare un po su un legno di pasta spolverazzato di farina. Mettere in fresco un ora.

Mettere da parte quasi un quarto della pasta per decorazione. Rotolare la pasta che rimane, e mettere nel fondo e su il lato di una tortiera rotonda che si apre a due parte. Deve avere un altezza di 7 cm. Mettere in fresco.

Ripieno

Mischiare burro e zucchero. Aggiungere ricotta, uova, vaniglia, ed il scorza. Versare nella pasta.

Con la pasta che rimane, tagliare 6 strisce e metterle attraverso il ripieno. Cuocere al forno caldissimo per 10 minuti (450 gradi Fahrenheit, circa 230 gradi centigradi), poi abbassare a medio o anche piu basso (325 gradi Fahrenheit, circa 160 gradi centigradi) per circa un ora e mezzo. Non cuocere troppo.

Single (for larger pie, just double all ingredients)3 lbs Ricotta
12 eggs
1 1/2 cups sugar
2 grated lemons (rinds only)
2 grated oranges (rinds only)
1 tsp cinnamon

  • Filling

Beat eggs and sugar together ’til smooth. Mix in ricotta, cinnamon, grated rinds, and beat ONLY ’til well mixed.

  • Dough

Single (for larger pie, just double all ingredients)

3 eggs
6 tbsp Crisco(melted and cooled)
1 tsp baking powder
2 cups flour
3 tbsps sugar

On a board, form a circle of flour. Mix sugar and eggs together.

Add Crisco and baking powder. Put in a circle and mix well and knead.

Roll dough to about 1/8th inch thick, large enough to fit bottom and sides of pan.

Top with strips as shown (about 1/2″ plus):

Bake at 350 degrees for 1 3/4 to 2 hours. Keep testing. Cool completely before refrigerating.
